If you’ve ever wondered what it takes to become a sommelier in a world-class restaurant, then get yourself a seat in The Lounge at Top Shelf on Saturday 8 August at 1pm.
David Lawler, beverage director of The Rockpool Group Melbourne and president of Sommeliers Australia, will be hosting a session that lifts a lid on how to go about becoming a wine expert in the hospitality sector. He’ll look at the training and skills required but also at the benefits of tasting some of the world’s great wines!
For those already in the trade, David will also host a session entitled How to Write a Profitable Wine List, which takes place at 1pm on Sunday 9 August in The Lounge at Top Shelf.
David overseas all of the beverage sourcing, purchasing, staff training and the writing of wine lists at Rockpool Bar & Grill, Spice Temple and Rosetta. Previously he was head sommelier at Vue de Monde. When it comes to all things vinous, this man knows his stuff.
Top Shelf takes place at the Royal Exhibition Building, Carlton Gardens on 8-9 August 2015. Around 40 free seminars and presentations are scheduled for the event.
