Merivale’s latest bar opens this weekend

This Sunday will see the official opening of Bert’s, Merivale’s latest bar and brasserie, which is located at The Newport on Sydney’s Northern Beaches.

Bert’s is the latest stage in Merivale’s extensive revamp of The Newport after it bought the venue from the Bayfields Group back in 2015. With a coastal European menu, Executive Chef Jordan Toft and his team are aiming to showcase fresh, beautiful Australian produce “that is served simply and elegantly”.

“We want to create that sense of relaxed indulgence you experience on a coastal European holiday; to capture the feeling when you decide to order the fresh lobster or relax into the afternoon with Champagne and oysters,” Toft said. “It is very special, yet completely fuss-free.”

Merivale’s Group Bars Manager Sam Egerton said that he took inspiration from grand European hotels and American country clubs to create the drinks list at Bert’s, with each drink representing one of the classic styles. Speaking about the ‘French 75’, Egerton said the cocktail elevates some of the classic flavour elements founds in Champagne.

“We make a roast almond vodka, mix that up with a white peach skin syrup and fresh citrus, then finish the drink with Ruinart Blanc de Blancs. All the good things”, he said.

Another signature is the Bert’s MarTeeny, a miniature martini with Absolut Elyx, Madeira and lemon oil, served with olives, cornichons and cocktail onions, and what Egerton describes as “the drink to order when you’re not sure what you feel like or you’re waiting for the rest of your guests to join.”

Overlooking Pittwater and the expansive grounds of The Newport, Bert’s is the second phase of the venue’s landmark redevelopment. Merivale first opened the iconic venue in March 2016, bringing the property’s grounds to life with an eclectic range of spaces in which to drink and dine. Bert’s has been created by Merivale’s design team of Justin and Bettina Hemmes, Akin Creative’s Kelvin Ho and stylist Amanda Talbot.

“The Newport has always held a very special place in the hearts of the Northern Beaches community; it is a truly magnificent site, in an incredible location,” said Justin Hemmes.

“Our long-term vision for the venue is to create a destination that genuinely has something for everyone – all occasions, ages, budgets and tastes.

“We opened the outdoor area first to provide a vibrant gathering place where friends and families can get together over a beer and a casual bite to eat.

“Now with the launch of Bert’s, we can also offer a special experience for those wanting that little something extra. Outstanding food and exceptional service in a beautiful setting – but still very comfortable and relaxed.”
