The Rook’s fresh look and new gin cocktails

Sydney rooftop bar The Rook has unveiled a fresh new look, and to celebrate its facelift, has also introduced a new ‘gin experience’ – inspired by tea – in partnership with Sipsmith.

The refurb sees the bar enter a new era, with the space now drenched in dusty pinks and burgundy, featuring deep tan leather seating and a street art feature wall. Its moody, dimly-lit bar features dark pink marbling and a terracotta bar front, where guests can enjoy a range of cocktails, wine and beers.

To celebrate the refresh, The Rook has also partnered with Sipsmith to launch ‘Hot Gin Roof’ – an exclusive gin menu featuring tea-inspired cocktails and served in vintage crockery.

The Hot Gin Roof cocktails include ‘Berrylicious’ (Sipsmith London Dry Gin, Hibiscus & Berry Tea, Ginger, Grapefruit, Mint), ‘Tea Time’ (Sipsmith London Dry Gin, Sipsmith London Cup, Earl Grey Tea, Orange, Cinnamon, Star Anise) and ‘Hot Ginsmith’ (Sipsmith London Dry Gin, Vanilla Chai Tea, Banana Liqueur, Cacao Nibs, Caramel, Cream).

A new food menu also complements the space, with grilled Yamba prawns, pearl barley risotto, mussels in a Thai broth and lobster sliders all set to keep guests fed.

‘We wanted to keep the soul of the original Rook, while giving it a fresh burst of energy,” says Daniel Corbett, executive chef. “The lobsters and burgers still take centre stage, but our wider breadth of culinary options perfectly echo the fresh, relaxed setting.”
