Recipe: Jimmy’s Margarita

An Aussie themed margarita created for Tio’s Cerveceria and El Jimador’s Margarita Month, February 2023.

“The beautiful thing about this cocktail is how easy it is to dress it up to suit. Dust your glass with Shichimi spice mix to make it a little spicy, add a touch of vanilla into the syrup to make it almost creamy, or like we do at Tio’s, drip some herb oil for that psychedelic finish,” Tio’s Jeremy Blackmore says.



  • 50ml El Jimador Blanco
  • 30ml lime juice (approx. one lime)
  • 20ml pineapple syrup
  • Shichimi spice mix or herb oil as garnish


  1. To make the pineapple syrup, combine equal parts pineapple juice and white sugar and a pinch of salt, and stir until completely dissolved
  2. Chill your coupette glasses for at least an hour
  3. Add all the ingredients (except the garnish) to a shaker
  4. Add one of the husks of the squeezed lime
  5. Add ice and shake as hard as possible for 10-12 seconds
  6. Fine strain into frozen glasses
  7. Apply garnish of choice
