Award-winning Australian gin distillery Never Never is levelling up the Tommy’s Margarita with an experimental recreation of the much-loved cocktail. Switching out tequila for Never Never’s Oyster Shell Gin as a base, the new take on the cocktail adds an element of briny coastal character, with flavours of savoury seaweed and grapefruit complementing the agave.

Produced from pacific oysters sourced locally on Kangaroo Island, Oyster Shell Gin uses waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint, to create an expression that delivers minerality and a subtle sea spray character.

Oyster Shell Gin Margarita


  • 60ml Never Never Oyster Shell Gin
  • 30ml lime juice
  • 15ml agave nectar
  • Bar spoon of jalapeño brine
  • Salt rim and chili pepper to garnish


  1. Add all of the ingredients into a cocktail shaker filled with ice
  2. Strain the cocktail into a pre-salt-rimmed glass
  3. Garnish with chili
