Sydney Harbour welcomes waterfront Pier Bar

Opening its doors last week was Sydney’s newest waterfront bar, Pier Bar. Located on the historic Pier One in Walsh Bay, the harbourside destination offers a selection of fruity cocktails and light bites with a laid-back atmosphere. 

The new bar, which opened on Wednesday 20 September, offers waterfront lounge settings designed for social gatherings and custom Australian-made furnishings designed by Susan and Gordan Tait. Honouring Pier One’s history as a dining and entertainment hub, the bar aims to revitalise the unique waterfront destination. Conor Gavin, Bar Manager, spoke about Pier Bar’s unique draw.

“Definitely the views, being right on Sydney Harbour along the historic Pier One in Walsh Bay, the ambience and service. You can really relax because you know you will enjoy your time here.

“The best part about this location is you get to enjoy the sunshine and take in the incredible harbour views all with a drink in hand. Aside from the traditional walk-in option, our guests can arrive in style by boat, like a water taxi, to start their experience off on a unique note.”

Bringing a wealth of international expertise, Conor has designed a unique cocktail menu that showcases premium Australian ingredients and fresh fruity flavours. The menu comprises six signature cocktails, alongside two non-alcoholic cocktails and a selection of local and imported beers and wines. Speaking about the new menu, Conor explained it was curated to put a fresh twist on classic cocktails.

“We wanted to play with fresh ingredients that will be abundant at this time of year, managing to work kiwis, davidson plum, avocados, apricots, apples and strawberries into our menu. We have also combined these with unique Australian and Sydney local distillers such as Kings Cross Gin, Ester Gin from Marrickville and Forty Spotted Give from Tasmania to name a few.

“Low ABV spritzes are definitely making a comeback, our Hugo Spritz is a personal favourite of mine. From our new cocktail menu, the Avocado Mezcal Margarita is definitely going to be a crowd pleaser. It’s got such unique flavours with the smokiness of the mezcal paired with the silky avo syrup and zesty lime. It is nice and fresh for the warmer months.”

Pier Bar’s food menu comprises a range of light bites and share plates, crafted to pair with the cocktail menu. Small plates include freshly shucked oysters and mini tacos, alongside large plates such as fresh seafood, pastas and steak. 

In a prime position to watch the sun set over Sydney Harbour, the summer ambience is uplifted by DJs playing music into the evening on Fridays and Saturdays. Just steps away from The Rocks, the music offering takes the venue from a laid-back lunch spot during the day, to a social hub in the evenings.

“Coming to Pier Bar, guests can expect the perfect balance of a chilled out yet stylish atmosphere, that heats up as the evening goes on with good music, great drinks and delicious snacks,” Conor added.

“We have been perfecting our cocktails and fine tuning our speakers in preparation for our DJs who will be playing the sounds of summer.

“We also have a sunset hour every day which is our take on happy hour, with $12 cocktails and $2 oysters which is going to be a highlight for summer.”
