Four Pillars and Hernö collaborate on new gin

Four Pillars and awarded Swedish distillery Hernö have come together to create a special release, London Dry style gin.

According to Four Pillars, the Four Pillars x Hernö Dry Island Gin was born out of “striking similarities in philosophy, in commitment and in ambition” between the two distilleries. Interestingly, Hernö came to market on 1 December 2012, exactly one year before Four Pillars.

The two distilleries’ paths crossed multiple times on the competition circuit – where each has enjoyed significant success – and in October 2017, Hernö founder and distiller, Jon Hillgren, visited Cam Mackenzie (Four Pillars co-founder and distiller) at Four Pillars Gin distillery in Healesville to collaborate.

For this Swedish-meets-Australian collaboration, Hillgren and Mackenzie (pictured above) distilled with juniper, coriander river mint, roasted wattle seed, strawberry gum, lemon myrtle, meadowsweet and fresh lemons.

According to Four Pillars, the result is a bright and lifted gin with beautiful citrus notes and a floral cut-grass character. The palate is weighty with a fresh pine forest character, and it’s clean and pure in classic London Dry style.

Four Pillars has also teased at a Swedish version (distilled at Hernö’s headquarters in the village of Dala) to be released in 2019 – so keep an eye out.

Dry Island Gin suggested serves

The Walking Dead (pictured above)

Ingredients:

  • 30ml Dry Island Gin
  • 25ml lemon juice
  • 20ml Maidenii La Tonique
  • 10ml sugar syrup
  • 3ml absinthe
  • Lemon twist

Method: Chill a coupette. Combine all ingredients in a cocktail shaker with ice, shake and fine strain. Garnish with a lemon twist.

The Golden Bijou

Ingredients:

  • 60ml Dry Island Gin
  • 10ml Dolin Dry Vermouth
  • 5ml Yellow Chartreuse
  • Lemon twist
  • Fennel fronds

Method: Stir all ingredients over ice until diluted (10 –15 seconds). Strain into a short tumbler filled with ice. Garnish with a lemon twist and some fennel fronds.
