Jackalberry: new travel-inspired cocktail bar opens in Sydney CBD

Jackalberry, a new cocktail bar described as “adventurous” and “immersive” and named after the native African tree, has opened on Sussex St in the Sydney CBD.

The venue, designed as “the perfect escape from the hustle and bustle of the Sydney CBD”, also has a cocktail focus – with the drinks menu offering a glimpse of the world’s various flavours.

Bar Manager Stuart Thompson (ex-Untied, Uncle Mings and The Morrison Bar and Oyster Room) heads up the bar team. “Jackalberry is inspired by the age of exploration, there will be something new and unique to discover on each visit,” he says.

“We have worked hard to design a cocktail menu that will transport guests to Tanzania one evening, and Italy the next through experimentation of flavours and presentation.”

Highlight destinations include Cancun, Mexico (‘The Yucatán Punch’: Ilegal Reposado Mezcal, Don Julio Blanco, Licor 43 passionfruit, lime, spiced agave); Dar es Salaam, Tanzania (‘The Livingstone’: Emperor Heritage Mauritian Rum, Dobson Distillery Oak Aged Saffron Gin, Rooibos Tisane, Lemon Oleo Saccharum, Rosemary Honey) and London (‘Hampstead Heath’: Sipsmith Gin, crème Yvette, blackberry sorbet, lime juice and cardamom).

The bar food menu continues the exploration theme and consists of a global selection of shareable comfort food favourites from various popular cuisines across Europe, Asia and the Americas.

The space – which features an abundance of greenery, dramatic wallpaper and velvet booth seating -was designed by interior stylist Belinda Cendron from Sourceress, who has worked on Baxter Inn and Shady Pines in the past.

“Drawing inspiration from the cocktail list and the age of exploration, the venue was designed to take patrons from day to night, with a rich botanical feel, featuring time worn materials like, rattan and stone, contrasted with rich velvets and illustrated wallpapers,” says Cendron.

“It is an adventurous space reflecting the work and studies of botanists and voyagers – a retreat for the modern-day explorer.”

Jackalberry is located at 161 Sussex St, Sydney and is open Monday – Saturday 7am to midnight (closed Sundays).
